Thankfully the internet is filled with creative home cooks willing to share their time-saving recipes with the rest of us. So check out a few of our favorites that saved us from too much take-out and became go-to meals. The added bonus: these quick and easy weeknight meals look and taste like you spent hours in the kitchen.
Loved by everyone in my house! It takes about 10 minutes to prep and is ready in 30 minutes. Tiffany at Creme De La Crumb really outdid herself with this recipe. It has all the makings of a fancy weekend meal on a weeknight!!
You might not think beets are for you, but trust me you’re going to love them in this savory dish. Did I mention there’s also feta and eggs?!? It’s essentially a fancy quiche that’s quick and easy. My family and friends love this one! Even my beet-avoiding daughter enjoys this tasty tuber-filled tart. I use refrigerated pie crust to make it even quicker on weeknights. Add a salad and your done! It also makes a great appetizer for those impromptu happy hour get-togethers.
This is not actually a meal, but it could be if you feel like you’ve overindulged and need to give your body a generous dose of veggies! I put it together on Sunday and we eat it all week long with dinner, as a salad topping or as a slaw on Pulled Pork Sandwiches. It’s SO good and super healthy!!
I love this recipe and make it often, but I’ve adapted it to the Instant Pot instead of the slow cooker. I use the Meat/Stew setting with the valve set to sealing with natural release. Dare I say, that this recipe is pretty close to Chipotle’s Carnitas!! These make some seriously good burritos, and we’ve also used it for spicy Pulled Pork Sandwiches. SO tasty!! Don’t forget to top it with with the Detox Salad!
Before I found this recipe I was spending more than an hour prepping everything separately to make Greek food for dinner, but no more.
